Ingredients for fried sauce without coconut milk
- 100 grams of fried krecek, soak hot water and drain
- 3 cloves of shallots
- 2 cloves of garlic
- 3 red chili, rough slice
- 10 whole cayenne pepper
- 1 teaspoon fried shrimp paste
- 2 tablespoons of oil to saute
- 10 grams of galangal, memor
- 1 lemongrass, memor
- 2 bay leaves
- 3 tablespoons of tamarind water
- 1 teaspoon salt
- 1 teaspoon brown sugar, fine shaved
- 1 tablespoon of sweet soy sauce (optional)
- Blend the onion, garlic, red chili, and fried shrimp paste.
- Heat the oil in the pan, saute the spices until fragrant.
- Add cayenne pepper, galangal, lemongrass, and bay leaves. Mix well and stir -fry briefly.
- Add the soaked krecek, then pour tamarind water.
- Season with salt, brown sugar, and sweet soy sauce if you like.
- Cook until the spices are absorbed and sauce thickens. Serve warm.
