Like the residents on the slopes of Mount Butak Blitar, who made it fruit flavored coffee to develop his business under the name Albilest special from Mount Butak Blitar. This is so that the product is different from others and has a high selling value.
As a result of learning from a friend in the Netherlands, Aris Setiyono created an innovation fruit flavored coffee. Without leaving the original coffee taste, the coffee beans are fermented with a variety of fresh fruit. Such as durian, strawberries, oranges, apples and lychees. Coffee beans that can be fermented are in the form of blended coffee. Or a mixture of Robusta and Arabica coffee beans.

“I got the knowledge of fermentation from a friend in the Netherlands. So it’s not fruit essence. But fresh fruit is juiced and then mixed with raw coffee beans,” explained Aris to detikcom at his home in Resampombo Village, Doko District, Sunday (27/10/2019).
The coffee beans are mixed with fruit juice, then put into airtight plastic for fermentation. It takes four to five tries to find out the success of fermenting coffee beans.

“If it is successful, all the liquid fruit juice will be absorbed by the coffee beans until it is completely dry. If it fails, the coffee beans will grow sprouts,” said the 33 year old man.
In one process of one type of fruit fermentation, Aris usually produces two kilograms of raw coffee beans. The coffee beans are then dried in the sun and then roasted. Roasting is the process of roasting raw coffee beans to form the original taste of coffee.
Aris markets fruit flavored coffee according to order. Some are still in the form of roasted coffee beans, while others are in the form of ground or ground coffee. One package weighing 200 grams is sold for IDR 50 thousand.

“Currently production is only based on orders. Around 40 kg per month, that is for the East Java and Kalimantan areas,” he said.
A connoisseur of fruit-flavored coffee, Abdul Aziz admitted that he found a unique taste sensation. The taste of coffee is strong, but the acidity is different.
“The acidity of the coffee is still strong, but the fermented fruit taste is also strong. It’s really good. It’s suitable if you drink it warm while having a discussion,” concluded this MSME activist in Blitar.
