Lawar is generally made from pork, duck or chicken. However, have you ever tried lawar made from goat meat? detikers can taste goat lawar at Warung Sate Kambing Thingadi, Gunaksa Village, Dawan District, Klungkung, Bali.
The location is about 100 meters east of the Tiyingadi intersection (I Dewa Agung Istri Kanya Statue). This viral culinary known as ‘Lawar Kambing Tiyingadi’ is located on Jalan Kusanegara, east side of the entrance to the Bali Cultural Center (PKB).

This stall, which has been around since 2004, is open from 08.00 WITA until finished (around 14.00 WIT). Usually customers immediately rush into this shop when it first opens.
They are not only local residents of Klungkung, but from Denpasar, Badung, to Karangasem. Customers are willing to travel far to enjoy the special goat lawar which is the main flavor of this stall.
Like monitoring detikBaliSaturday (29/6/2024) afternoon, all available parking spaces are full. In fact, the hundreds of available seats were also full of customers, causing queues to get packages of rice with skewered satay, sate lilit, lawar and gule.
The owner of the Sate Kambing Thingadi stall, Anak Agung Istri Alit, said that what makes his stall always busy is the lawar which is specially formulated so that there is no prengus smell from the goat.
“The goats used are selected, all the goats are young, there are no old goats, so the meat is soft. Including the meat in the gule, it is also soft,” said Gung Istri to detikBaliSaturday.
Meanwhile, for lawar, the main thing is meat from goat skin which is finely chopped into sticks 5 cm long. The minced meat is mixed with long beans and young klutuk bananas.

“When boiling the skin, it is also mixed with natural spices,” added this resident of Paksebali Village.
For the process from start to sale, Agung Istri invited 30 employees. Their duties range from looking after goats, butchering, cooking, to waiters at the Thingadi Kambing Sate stall.
Gung Istri said that he could slaughter as many as eight to nine goats every day.
Portion Price
The price for one package consisting of rice, satay lilit, skewered satay, lawar and gule is currently IDR 50 thousand. This package includes available drinks such as orange ice, iced tea or mineral water.
“You can request satay, some people ask for mixed skewers with twists, there are also just skewered satay. If the customers are busy and full, sometimes I forbid them from ordering wraps, poor people who are already sitting can’t get it, sometimes it’s gone at 12 noon,” he said. Gung Wife.

One of the buyers, Sugiana, said that every time she comes to the Sate Kambing Thingadi stall, it is always full and you have to queue. “Not only during holidays like this, on weekdays it is also busy. (Office people) usually come a lot to eat lunch here,” he said.
Sugiana said that apart from enjoying the delicious satay and goat lawar, visitors can also enjoy views of the Subak Gunaksa rice fields with the Bali Cultural Center area on the west side.
