All recipes for the menu at Warung Ari are prepared directly by the owner, Nengah Rambid. His experience selling culinary delights made from marlin fish for 30 years makes the deliciousness of his concoctions undeniable.

Rambid, from the past until now, has consistently used fresh marlin fish and utilized many spices for his culinary dishes. Marlin fish, the main raw material for culinary dishes, is obtained from fishermen at Benoa Harbor, Denpasar.

The marlin fish is then mixed with various spices. Especially for marlin fish satay, Rambid seasoned it with garlic, shallots, chilies, ginger and galangal.

Meanwhile, for pepes, Rambid uses boneless marlin fish. The marlin is then coated base genep (complete spices) typical of Bali.

Rambid and a number of his employees at Warung Ari have been busy cooking every day since 03.00 WITA. They then continued to sell from 06.30 WITA to 15.00 WITA. However, it is not uncommon for the culinary delights there to sell out before the stall closes.

“Usually 10 kg (marlin fish ingredients) will run out every day and if it’s busy more than that, around 15 kg more,” said Rambid when met at his shop, Sunday (29/12/2024).

The marlin fish satay at Warung Ari is priced at IDR 2 thousand per piece. Meanwhile, the complete package containing two marlin fish satay, lilit satay, plecing vegetables, pepes, one portion of marlin fish meatballs, and white rice is sold for IDR 20 thousand.

“So far, there have been buyers from Jakarta and other areas. Everyone from Bali already knows where it is sold here. They like the satay the most. In fact, buyers from Jakarta usually order via WhatsApp to buy satay and pick it up at the stall later,” said Rambid.
