Enjoy Sacrificial Meat Satay with Gorontalo’s Typical Rica Onion Seasoning

This culinary dish is a typical processed food from Gorontalo Province and is usually found during Eid al-Adha in the area known as Serambi Madinah.

The main ingredients for this satai are of course beef and goat. Skewer the sacrificial meat, then sprinkle it with lime juice and salt, then grill it over hot coals.

Once cooked, the satay is served with a sprinkling of samia type cayenne pepper with a spicy taste. This chili sauce is known as onion rica chili sauce, the processing of which is quite simple.

How to make garlic chili sauce is also quite easy. First, prepare all types of cayenne pepper according to your needs, then grind them. Once smooth, the cayenne pepper is added with sliced ​​shallots which are then added with salt and a little micin.

It doesn’t stop there, the cayenne pepper that has been processed is then doused with traditional coconut oil or what local people call village coconut oil.

Before being poured, the oil is first heated. After watering, let it sit for 5 minutes to cool, then the onion rica satay is ready to be served.

“In Gorontalo, onion rica satay is legendary, especially during the festival of sacrifice,” said Nurfadila to Liputan6.com.

According to Nurfadila, garlic satay is different from satay in general. The spicy taste combined with the savory taste is the superiority of this processed meat.

“In general satai has a sweet and spicy taste, but with rica onions it has a spicy sensation and a delicious meaty taste,” he said.

“In the Purwakarta area there is what is known as maranggi satay, in Gorontalo there is garlic rica satai with a spicy sensation,” he stressed.
