Chocolate Truffle Recipe

Material

  • 326 grams dark chocolate chips
  • 196 grams of heavy cream
  • ¾ tsp ground ginger (optional)
  • ½ tsp ground cinnamon (optional)
  • 1 pinch ground black pepper (optional)
  • 1 small pinch of salt (optional)
  • 1 small pinch of chili powder (optional)
  • 2 cups dark chocolate chips for coating
  • 1 slice of gingersnap cake, grated
  1. Put the chocolate chips into a heatproof bowl. Add spices such as ginger, cinnamon, black pepper, salt, and chili if desired.
  2. Heat the heavy cream over medium heat until almost boiling, then pour into the chocolate bowl. Leave for 2 minutes for the chocolate to start to melt.
  3. Stir gently until the chocolate is completely melted and forms a glossy ganache. Cover the bowl with plastic wrap and let it cool for 15 minutes until the texture hardens.
  4. Take the ganache using a small spoon or scoop, then shape it into small balls the size of 2 teaspoons. Place the balls on a baking sheet lined with baking paper, then put them in the refrigerator for 15 minutes.
  5. Melt additional chocolate chips in a bowl set over a pan of hot water. Once the chocolate is melted, add the remaining chocolate chips and stir until dissolved.
  6. Dip the truffle balls into the melted chocolate using a fork, making sure to coat evenly. Place the balls back in the baking dish, then sprinkle with grated gingersnaps.
  7. Allow the chocolate coating to set completely before serving. For storage, keep the truffles in the refrigerator to keep them fresh, and let them reach room temperature before enjoying.
