Delicious Sambal Matah recipe and tips to look fresh


Kompas.com – Sambal Matah is one type of sambal that is famous for its fresh and spicy taste.

This sambal is often used as a companion to various dishes such as grilled fish, fried chicken, and Balinese mixed rice.

So that the Sambal Matah looks fresher, there are some tips that can be applied when processing it.

Tips for making fresh sun sauce

According to Chef Erwin Hidayat from Arosa Hotel Bintaro Jakarta, one of the tricks so that the more fresh chili sauce is to soak the chili in the ice before use.

This aims to maintain the color of the chili to remain bright and provide a sensation of freshness to the chili sauce.

In addition, the selection of fresh ingredients and the right way to cut also affect the final results of the Sambal Matah.

Here is a recipe for chili sauce that you can try at home.

Ingredients:

  • 50 grams of shallots
  • 10 grams of red cayenne pepper
  • 10 grams of green cayenne pepper
  • 3 lemongrass stems
  • 6 orange leaves
  • 2 lime fruit
  • 5 grams of salt
  • 3 grams of pepper
  • 3 grams of sugar
  • 1 tablespoon of shrimp paste
  • Cooking oil to taste

How to make sambal matah:

  1. Soak the shallots, red cayenne pepper, and green cayenne pepper in ice water to maintain its freshness.
  2. Saute shrimp paste until fragrant, then set aside.
  3. Iris onion with medium thickness, not too thin.
  4. Slice red chili and green chili, then sift so that the seeds do not enter too much into the chili sauce.
  5. Thinly sliced ​​orange leaves, remove the bone so that the texture is softer.
  6. Slice the inside of the lemongrass stem, because this part is softer and has a scent that is not too pungent.
  7. Squeeze lime and mix the water into the chili sauce.
  8. Add salt, flavoring, pepper, and sugar to taste, then stir well.
  9. Pour the sauteed shrimp paste with one tablespoon of oil, then stir again.
  10. Add enough cooking oil, stir well, then let stand for a moment so that the spices are absorbed.
