Delicious and Fresh Pickled Milkfish Recipe for Family Meals


KOMPAS.com – Pickled milkfish is a traditional Indonesian dish that combines sour, savory and fresh flavors in one dish.

Milkfish is fried until crispy and then marinated in fresh pickles, making it a suitable menu choice to enjoy during the day or evening.

This dish is very popular because it is not only delicious, but also easy to prepare at home.

The key to this recipe is the use of star fruit vegetables and cucumber which provide a fresh sour taste, as well as subtle spices which absorb perfectly into the savory milkfish.

Pickled Milkfish Recipe

Material

  • 1 milkfish, clean and fry
  • ½ young cucumber, remove the contents, thinly sliced
  • 3 star fruit vegetables, cut obliquely
  • 5 red chilies, cut obliquely
  • 2 tbsp brown sugar
  • 2 tbsp sweet soy sauce
  • 2 tablespoons oil for frying

Ground spices

  • 5 red onions
  • 3 cloves of garlic
  • 2 candlenuts
  • 2 cm turmeric
  • 150 ml water

How to Make Pickled Milkfish

  1. Heat oil in a frying pan, then saute the ground spices until fragrant.
  2. Add the cucumber, red chili and starfruit, then stir until wilted and fragrant.
  3. Add brown sugar and sweet soy sauce, then pour in the water. Let the spices boil and mix well.
  4. Add the fried milkfish, stir gently until the fish is well coated in spices. Cook briefly until all the spices are absorbed.
  5. Remove and serve sprinkled with fried onions if you like.
