Come try it! Make Chef Devina’s Grilled Squid with Jimbaran Spices

DENPASAR, BALIPOST.com – Jimbaran is one of the locations in Bali which is very well known for its delicious seafood culinary delights. In fact, Jimbaran-style seafood has become one of the trade marks of the area because of its delicious and appetizing taste.

In your free time, especially spending time at home this weekend, there’s no harm in trying to make Jimbaran style grilled squid, the recipe for which comes from one of the chefs, Devina Hermawan. The following is the recipe quoted from the tiktok account @devina.hermawan:

Ingredients:

470 gr fresh squid
80 gr pineapple
½ tsp salt
¼ tsp pepper
7 red onions
4-5 cloves
3 candlenuts
1 sachet of shrimp paste
2 tbsp oil
1 tbsp water
½ tbsp chili sauce
1 tbsp oyster sauce
1 tbsp tomato sauce
100 ml water
1 tbsp sweet soy sauce

How to make:

Clean the squid first, then pierce the middle of the squid.
Then marinate the squid with grated pineapple, salt and pepper. Marinate the squid for 20-30 minutes.
Blend the shallots, garlic, candlenuts, shrimp paste, oil and water together, then saute the spices.
When stir-fried, add chili sauce, oyster sauce, tomato sauce, water and sweet soy sauce.
Dry the squid so it doesn’t get watery, then cook it just before seasoning it so the seasoning doesn’t burn.
Once half cooked, apply the prepared spices, then continue grilling until cooked.
Squid can be served with rice and added with dabu-dabu chili sauce.

Dabu-dabu Sambal Recipe

This chili sauce can be a complement to the grilled squid with Jimbaran spices that you have made. Here’s the recipe, quoted from the Cookpad website:

Material:

12 orange cayenne peppers
8 green cayenne peppers
2 green tomatoes
1 red tomato, remove the middle
4 red onions
2 tbsp lemon/lime juice
1/2 tsp salt
1/4 tsp beef flavoring or mushroom stock
5 tablespoons hot cooking oil

How to make:

Prepare the required ingredients and wash them thoroughly.
Slice all the ingredients into small cubes, place in a container. Add salt and seasoning. Stir well.
Add lemon/lime juice. Just adjust the acidity level to your taste. Stir well.
Heat cooking oil. When it’s hot, pour cooking oil into the dabu dabu chili sauce. Stir well. And ready to be served along with other dishes. Good luck. (Cahya Dwipayanti/balipost)
