Clear soup chicken soup recipe
Material
- 1½ liters of water for boiling
- ½ chicken, cut into pieces
- 3 tablespoons oil for frying
- 150 gr vermicelli, brew warm water
- 100 gr small bean sprouts
- 2 boiled eggs, sliced round
Spice
- 5 cloves of garlic, crushed
- 2 stalks lemongrass, bruised
- 2 cm ginger, crushed
- ½ tsp ground pepper
- 5 lime leaves, remove the leaf bones
- 1½ tsp salt
- 1 tsp granulated sugar
Complementary
- Fried onions, celery slices, potato chips, lime slices, candlenut chili sauce
How to make clear chicken soup
- Boil the chicken in 1½ liters of water until tender. Remove the chicken, drain, then cut into small pieces according to taste.
- Saute fine garlic until fragrant. Add lemongrass, ginger, ground pepper, lime leaves, salt and granulated sugar to the stir fry.
- Add the stir-fried spices to the chicken cooking water. Bring to a boil again until the aroma of the spices comes out and the sauce becomes rich in taste.
- Prepare a serving bowl, place the brewed vermicelli, small bean sprouts and chicken pieces. Add sliced boiled eggs on top.
- Pour the hot sauce into a bowl until all the ingredients are covered. Sprinkle with fried onions, sliced celery and potato chips as a complement.
- Serve the chicken soup in clear soup with candlenut chili sauce and lime wedges on the side for added flavour.
