Chicken satay recipe with typical Madurese peanut sauce



Jakarta (ANTARA) – Chicken satay is a popular menu in Indonesia and can be found anywhere.

One of the most common types of chicken satay is chicken satay typical of Madura, East Java, with peanut sauce and soy sauce and rice cake as a complement.

It is not uncommon for Madurese chicken satay to be served with pieces of cayenne pepper if consumers like the spicy taste.

If you have free time, you can make your own typical Madurese chicken satay by following the recipe below.

Madurese peanut sauce chicken satay

The main ingredient:

• 500 grams of chicken breast meat, cut into cubes
• Sufficient skewers

Marinade ingredients:

• 3 cloves of garlic, crushed
• 4 cloves of shallots, puree
• 1 tablespoon coriander powder
• 1 tablespoon sweet soy sauce
• Salt to taste
• Lime juice

Peanut sauce ingredients:

• 150 grams of peanuts, fried and crushed
• 3 cloves of garlic, crushed
• 3 curly red chilies or according to taste
• 1 tablespoon (tbsp) brown sugar, combed
• 1 tablespoon tamarind juice
• Salt to taste
• 200 ml water
• 2 tbsp sweet soy sauce

Complementary:

• Lontong or white rice (optional)
• Fried onions
• Lime juice (optional)
• Chili sauce (optional)

How to make peanut sauce chicken satay

1. Mix all the marinade ingredients in a large container. Mix well.

2. Add the chicken pieces to the marinade. Stir until all parts of the meat are coated with spices.

3. Let stand for 30 minutes so that the spices are completely absorbed into the meat.

4. While waiting, saute the crushed garlic and red chilies until fragrant.

5. Add the ground peanuts, then stir well.

6. Add brown sugar, tamarind juice, salt and water. Stir until the spices thicken.

7. Once cooked, add sweet soy sauce and stir well. Then lift and set aside.

8. Skewer the marinated chicken pieces.

9. Prepare the grill using charcoal or a grill on the stove.

10. Grill the satay while brushing occasionally with the remaining marinade and sweet soy sauce until the satay is cooked and browned.

11. When cooked, serve the chicken satay by adding peanut sauce.

12. Sprinkle fried onions over the chicken satay, and serve with lontong or white rice. Add lime slices for a fresh taste.
