Medical oncologist Aru W Sudoyo explained that red meat that is heated and burned until black can turn into a carcinogen (a substance that triggers cancer).
“If the satai meat turns black, it will contain carcinogenic substances. Of course, this is dangerous because it can trigger cancer,” explained Aru when explaining about cancer some time ago.
Eating grilled meat, according to studies, can increase the risk of cancer. Moreover, satai is cooked by grilling it using charcoal.
Carcinogens are formed through the combustion process. The amino acids, sugars and creatine in meat will react at high temperatures, which forms heterocyclic amines (HCA) so that cancer cells can appear.
