Where is it best to store eggs?
Quoted from Real SimpleWednesday (23/10/2024), storing eggs in the refrigerator or at room temperature actually depends on where you live and the regulations of a country.
“The need to refrigerate fresh eggs depends on where you live and how they are processed,” said Kelly Slentz, Senior Associate Marketing Manager at US dairy company Organic Valley.
Slentz gave an example, in the United States, Japan, Australia, New Zealand and several Scandinavian countries, raw eggs are stored in the refrigerator because these countries’ regulations require eggs to be washed, processed and stored in the refrigerator to reduce the risk of salmonella contamination.
Several European and Asian countries do not require eggs to be stored in the refrigerator. The reason is, these eggs already have a protective layer called a cuticle which prevents the growth of bacteria.

Apart from country regulations, storing eggs in the refrigerator or at room temperature also depends on costs and shelf life preferences.
However, eggs that have been stored in the refrigerator should still be stored in the refrigerator. Because, when taken out of the refrigerator and placed at room temperature, the eggs can become runny or condensation occurs.
The moisture in the egg shell can be a place for bacteria to breed within a few hours.
