Burnt Cheese Cake Recipe

Material:

  • Unsalted butter to coat the baking dish
  • 2 lb cream cheese, room temperature
  • 1½ cups (300 g) granulated sugar
  • 6 large eggs
  • 2 cups heavy cream
  • 1 tsp kosher salt
  • 1 tsp vanilla extract
  • ? cup (42 g) all-purpose flour

How to Make Burnt Cheese Cake

  1. Preheat the oven to 400°F (200°C) and place a rack in the middle. Spread butter on a 10 inch diameter springform pan, line it with parchment paper 2 inches higher than the sides of the pan.
  2. Beat the cream cheese and sugar with a mixer until soft and the sugar dissolves, about 2 minutes. Add the eggs one at a time while continuing to beat, making sure each egg is mixed in before adding the next.
  3. Reduce mixer speed, add heavy cream, salt and vanilla. Beat until smooth, then add the flour that has been sifted using a sieve. Beat again until the mixture is smooth and homogeneous.
  4. Pour the mixture into the prepared baking dish. Bake for 60–65 minutes until the top is golden brown and the center is still jiggly.
  5. Cool the cheesecake to room temperature, then remove from the pan and peel the parchment paper from the sides. Serve at room temperature, cut into portions, and enjoy with a glass of sherry if desired.
