Basil Tilapia Stew Recipe, Soup Menu During the Rainy Season


KOMPAS.com – When it rains and the air feels cold, enjoying a dish with warm soup can relieve fatigue and warm the body. One menu that is worth trying is the tilapia basil stew.

Basil tilapia stew recipe from the book “Most Popular Home Food Recipes: Delicious Stew Variations” Indriani’s work (2011) published by PT Gramedia Pustaka Utama can be imitated by beginners.

The type of fish used can be adjusted to taste. The key is, you need to fry the fish separately before mixing it into the stew sauce.

Ingredients for basil tilapia stew:

  • 2 medium sized tilapia fish (cut into pieces)
  • 1 teaspoon salt
  • 1 lime
  • 2 lime leaves
  • 1 tomato (cut into pieces)
  • 4 red chilies (long slices)
  • 4 starfruit (slit lengthwise)
  • 4 tablespoons sweet soy sauce
  • 500 milliliters of water
  • 1/2 teaspoon salt
  • 1/4 teaspoon granulated sugar
  • 1/4 teaspoon ground nutmeg
  • 5 sprigs of basil (pick the leaves)
  • 300 milliliters cooking oil

Ground spices:

  • 6 red onions
  • 3 cloves of garlic
  • 2 centimeters ginger
  • 1/2 teaspoon pepper

How to make tilapia basil stew:

1. Clean the fish then coat with a teaspoon of salt and lime juice until evenly coated, then let sit for about 10 minutes.

2. Fry the fish in hot oil using medium heat until brown, then remove from heat and set aside.

3. In a separate pan, saute the ground spices with lime leaves until fragrant, then add the red chilies and tomatoes, then cook until wilted.

4. Pour in the water, starfruit, salt, granulated sugar and ground nutmeg, then cook again, stirring occasionally, until it boils. Add the fish and basil leaves, then stir briefly and serve while warm.
