Tongseng Recipe
To make mutton tongseng, the cooking time required is 45 minutes.
This recipe can be served for 5 servings.
Materials required:
400 grams of goat thigh meat, cut into pieces
5 thinly sliced red onions
2 cm crushed galangal
1 bruised lemongrass stalk
2 bay leaves
2 tablespoons sweet soy sauce
1,500 ml coconut milk from 1 coconut
100 grams of cabbage, cut into 2 cm pieces
2 spring onions, roughly chopped
1 red tomato cut into pieces
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon granulated sugar
2 tablespoons fried onions for complement
2 tablespoons oil for frying
Ground spice recipe:
4 cloves of garlic
6 red onions
1 teaspoon pepper
4 roasted candlenuts
3 cm roasted turmeric
1 teaspoon coriander
2 cm ginger

1. Heat oil. Saute ground spices, shallots, galangal, lemongrass, bay leaves until fragrant.
2. Add the goat meat. Stir until it changes color.
3. Add sweet soy sauce, salt, pepper and sugar. Stir well.
4. Pour in the coconut milk, cook, stirring occasionally so that the coconut milk doesn’t break down, until the beef is soft and soupy.
5. Add cabbage, spring onions and tomatoes. Stir until wilted.

Rendang Recipe
To cook rendang, the time needed is 90 minutes.
This recipe can be served for two people.
Materials required:
500 grams beef rendang, cut into pieces
300 ml thick coconut milk, from 1 coconut
1,000 ml of thin coconut milk, remaining thick coconut milk
1 cm galangal, bruised
3 stalks of lemongrass, white removed, crushed
3 turmeric leaves
3 kaffir lime leaves, stems removed
1/2 tablespoon salt
1 teaspoon granulated sugar
2 pieces of kandis acid
Ground spice recipe:
10 curly red chilies
3 large red chilies
12 red onions
5 cloves of garlic
1 cm ginger
1 cm turmeric, roasted
3 candlenuts, roasted
1/2 teaspoon pepper
2 teaspoons coriander powder

2. Add the meat.

Goulash Recipe
The following curry menu recipe can be served for six people.
Materials required:
300 grams of goat meat, cut into cubes
100 grams goat liver, cut into cubes, boiled
100 grams of lung, cut into cubes, boiled
100 grams spleen, cut into cubes, boiled
100 grams goat intestines, cut into pieces, boiled
4 cloves
3 cm cinnamon
2 cardamom pods
2 pieces of kandis acid

4 lime leaves, sliced
2 bay leaves
2 cm galangal, crushed
2 cm ginger, crushed

Materials required:
500 grams of tuna, cut into pieces
500 ml water
2 bay leaves
3 stalks lemongrass, bruised
3 cm galangal, bruised
2 tablespoons brown sugar
300 ml coconut milk from 1 coconut
200 grams of coarsely grated coconut
1/2 tablespoon salt
1 tablespoon tamarind water, from 1 tablespoon tamarind
dissolve in 2 spoons of water
15 lime leaves, bones removed, finely sliced
Ground spice recipe:
5 candlenuts, roasted
12 red onions
5 cloves of garlic
1 tablespoon coriander powder
1/4 teaspoon cumin
