Pumpkin paste ingredients creamy:
- 2 tbsp olive oil
- 1 onion (finely chopped)
- 2 cloves garlic (crushed)
- 500 gr pumpkin (peeled and diced)
- 100 ml whole milk
- 2 tbsp puree tomato
- 2 tbsp mascarpone
- 350 gr pasta
- 40 gr grated parmesan

How to make pumpkin paste creamy:
1. Heat oil in a pan over medium heat, then saute the onions and a pinch of salt for about 10 minutes or until the onions are soft.
2. Add the garlic and saute again for one minute, then remove from heat and let cool slightly.
3. Meanwhile, cook the pumpkin in a pan of boiling salted water for 10 to 15 minutes or until the pumpkin is tender, then drain. Blend pumpkin with 50 milliliters of milk and onion until smooth.
4. Add liquid milk gradually until the consistency is thick, then pour in the pumpkin mixture, puree tomatoes, and mascarpone into a non-stick skillet. Cook using low heat until it boils.
5. In a separate pan, boil the pasta in boiling water with a pinch of salt until the pasta is soft. After that, remove and drain the pasta.
6. Stir the pasta with pumpkin sauce and Parmesan cheese evenly, then remove from heat and serve while warm.
