Cheese Baked Potato Recipe, Delicious and Filling Snack

  • 4 potatoes (medium size)
  • 2 tbsp olive oil
  • 25 g butter
  • 1 large onion (thinly sliced)
  • 6 slices bacon (chopped)
  • 2 tbsp heavy cream
  • 200 gr mixed melted cheese
  • Chopped parsley to taste

1. Preheat the oven to 200C/180C fan/gas six, prick the potatoes with a fork, then coat with half the oil, a pinch of sea salt and black pepper.

2. Arrange the potatoes on a baking sheet and bake in the oven for about an hour and 15 minutes, until the skin is crispy and completely tender when pierced.

3. Meanwhile, heat the remaining oil and half the butter in a frying pan, then add the onions and cook gently for 15 to 20 minutes until soft and golden.

4. Remove the sauteed onions from the pan and set aside, then add the minced meat and fry until crispy. Remove the meat using a slotted spoon and place it on a kitchen towel.

5. Halve all the potatoes lengthwise, then scoop out most of the potato filling into a bowl, leaving the skin with a thin layer of potato.

6. In a bowl, mash the potatoes with the remaining butter and heavy cream. Season with salt and pepper, add the onion, bacon, three-quarters of the cheese and half the parsley, then stir until evenly mixed.

7. Put the potato mixture back into the skin, then sprinkle the top with the remaining grated cheese.

8. Transfer the potatoes to a baking sheet and return to the oven for 10 to 15 minutes. Bake until the potatoes are melted and golden.

9. Remove the baked potatoes from the oven, then sprinkle with the remaining parsley. Serve the cheese baked potatoes while warm.
