Rica-rica chicken recipe, spicy and savory side dish ideas for family


KOMPAS.com – Rica-Rica chicken is a typical dish from Manado, North Sulawesi, known for its savory spicy flavors.

With spices rich in spices, such as onions, chili, and basil leaves, rica-rica chicken is a menu that can be made at home.

Material:

  • 1 chicken (cut according to taste)
  • 5 orange leaves
  • 1 lemongrass (loading)
  • 1 Bunch of Basil (Siangi)
  • Enough water
  • Powder pepper to taste
  • Salt to taste
  • Enough oil (for frying)

The seasoning ingredients that are mashed:

  • 8 shallots
  • 4 cloves of garlic
  • 3 cayenne pepper
  • 3 curly red chili
  • 3 big red chili
  • 1 big tomato
  • 1 turmeric segment
  • 1 ginger segment
  • 1 galangal segment

How to make rica-rica chicken

  1. Coat the chicken with a little salt. Let stand a few minutes so that the spices are absorbed.
  2. Pour the oil into the pan to be heated, then fry the chicken until brown and cooked. Remove and drain.
  3. Use three tablespoons of used oil frying chicken. Greng spices with lemongrass and orange leaves until scented.
  4. Add fried chicken into the fried seasoning. Mix well until the chicken is wrapped in seasoning.
  5. Pour enough water, then cook over medium heat until the chicken is tender and the spices are absorbed. Correction of flavor by adding salt and pepper powder according to taste.
  6. Add basil leaves, stir briefly until wither. Remove and serve rica-rica chicken with warm white rice.
