Simple Spicy Chicken Soup Recipe, Perfect for Lunch

Material:

  • 150 grams chicken breast filet (sliced ​​thinly)
  • 100 grams squid (roughly chopped)
  • 2 dried hioko mushrooms (boiled, chopped)
  • 1 piece of Chinese tofu (cut into 1×1 cm squares)
  • 50 grams carrots (finely matchstick sliced)
  • 2 cloves garlic (finely chopped)
  • 1/2 onion (finely chopped)
  • 1 cm ginger (finely chopped)
  • 1 dried red chili (finely chopped)
  • 1 large red chili (remove seeds, finely sliced)
  • 1 1/2 tablespoons chili sauce
  • 1 tablespoon soy sauce
  • 2 1/4 teaspoons salt
  • 1/4 teaspoon ground pepper
  • 3/4 teaspoon granulated sugar
  • 1 teaspoon sesame oil
  • 20 grams of cornstarch (dissolve in 50 ml of water as a thickener)
  • 1 egg (beaten well)
  • 2 spring onions (cut into 1 cm rounds)
  • 1,500 milliliters chicken stock
  • 2 tablespoons oil for frying
  1. Heat oil in a frying pan. Saute garlic, onion, ginger and dried chilies until fragrant. Add the large red chili slices, stir until evenly mixed.
  2. Add chicken filet and chopped squid. Stir until the chicken and squid change color.
  3. Add hioko mushrooms, chili sauce, soy sauce, salt, pepper and sugar. Stir until the spices are mixed well.
  4. Transfer the stir-fry to a saucepan. Pour in the chicken stock and add the carrots. Cook until boiling.
  5. Add Chinese tofu pieces to the soup. At this stage, you can choose whether you want spicy chicken soup with thin or thick sauce.
  6. If you want a thick soup, pour the cornstarch solution into the soup while stirring gently. Add the beaten egg and stir again until smooth.
  7. Turn off the heat, add the chopped spring onions and sesame oil. Stir until evenly mixed. Serve warm spicy chicken soup with white rice.
