Mama Yulita Intan is again pampering her loyal followers with mouth-watering recipes. This time, he shares the recipe for Ayam Masak Kurma, a simple but rich chicken dish that was a favorite when he first learned to cook. This recipe offers a combination of sweet, spicy and savory flavors that are guaranteed to tempt your appetite.

Required ingredients:
Chicken and marination:
– 1 chicken (or 4 thighs)
– 4 fresh tomatoes
– 4 tablespoons brown sugar, comb
– 1 tsp salt

Ground spices:
– 9 red onions
– 7 cloves of garlic
– 1 pack of instant shrimp paste
– ½ tsp ground pepper
– ½ piece of ginger
– 1 tsp salt
– 1 tbsp sugar
– ½ tsp flavoring (optional)
– 1 tsp powdered chicken stock

Addition:
– 5 large red chilies (cut lengthwise, soak in ice water)
– 300 ml of water

Steps:
1. Marinate the chicken: Mix the chicken with tomatoes, brown sugar and salt. Squeeze until the tomatoes are crushed, then let sit for 20 minutes.
2. Prepare the ground spices: Puree the shallots, garlic, shrimp paste, ginger and pepper. Cut the chilies lengthwise, then soak them in ice water to keep them fresh.
3. Saute the spices: Saute the ground spices until cooked and fragrant. Add salt, sugar, seasonings and chicken stock powder to enrich the taste.
4. Cook the chicken: Add the marinated chicken to the spices, stir well. Add 300 ml of water, cook until the chicken is cooked and the water has reduced slightly.
5. Add chilies: Add the chili pieces, cook until wilted. Lift and serve.
