Not fried, this is a healthy way to cook tempeh


KOMPAS.com – The easiest and most frequently found dish made from tempeh is fried tempeh.

Starting from food stalls, stalls, to fried food sellers on the side of the road, there is always fried tempeh.

Even so, cooking tempeh by frying turns out to not be a healthy way to process tempeh.

Even if you fry using new oil, frying tempeh is still unhealthy.

Professor of the Department of Food Science and Technology IPB and Chair of the Indonesian Tempe Forum, Made Astawan, said that tempeh is a rich source of nutrition.

One of its main advantages is the content of lactic acid bacteria, which function as prebiotics to maintain a healthy digestive system.

Interestingly, the content of lactic acid bacteria in tempeh is higher than in yoghurt. However, this benefit can only be obtained if tempeh is cooked in the right way.

Unfortunately, cooking methods such as frying can damage these good bacteria, reducing their benefits for digestion.

Apart from that, Made also explained that the process of frying tempeh can replace the healthy soybean oil content with cooking oil which contains saturated fat.

In fact, the soybean oil in tempeh is known to be rich in vegetable fats which are good for body health.

Another interesting fact about tempeh is the presence of natural MSG (monosodium glutamate) inside it.

This content acts as a natural flavor enhancer, so you don’t need to add artificial MSG when cooking tempeh.

Healthy way to cook tempeh

So that the nutritional content of tempeh remains optimal, Made recommends several cooking methods that do not involve high temperatures. Some of these methods are:

  1. Steaming
  2. Burn
  3. Baking

Apart from choosing the right cooking method, it is important to ensure that the tempeh used is clean and hygienic during the production process.
