This problem often occurs due to errors in cooking methods. Even though it looks simple, cooking instant noodles actually requires certain tricks to get perfect results.

How to cook instant noodles so they don’t get soft

Here are several ways to cook instant noodles in coffee shop (warkop) style that you can try so that the noodles remain supple, not soggy, and more delicious.

1. Water the noodles with hot water before cooking

The habit of putting noodles directly into boiling water can actually make the texture too soft. Before boiling, cover the noodles with hot water first.

This step helps maintain cleanliness and releases the flour layer on the noodles, so the texture becomes chewier when processed.

2. Soak the noodles in hot water

For types of noodles such as egg noodles or wet noodles, the best step is to soak them in hot water at a temperature of around 70 degrees Celsius.

Don’t use boiling water so the texture isn’t too soft. Soak for 15–20 minutes, enough for the noodles to become limp but still springy.

3. Set the duration when boiling the noodles

The duration of boiling the noodles is very important. Boil the noodles according to the instructions on the package, usually about five minutes. After that, remove and drain the noodles immediately.

To stop the cooking process, cover the noodles with cold water. This technique also ensures that the texture of the noodles remains chewy. For boiled noodles, cook them a maximum of one hour before serving so they don’t get soggy quickly.

4. Add cooking oil when boiling

Certain types of noodles, such as vermicelli or egg noodles, tend to stick when boiled. To overcome this, add a little cooking oil to the cooking water. Stir occasionally so the noodles don’t stick to the bottom of the pan.

5. Correct technique for frying noodles

There are two ways to fry noodles, namely by stir-frying (using a little oil) or deep frying (use lots of oil).

For deep fryinguse medium heat and fry the noodles until golden brown. If sautéing, use a non-stick frying pan and oil that is hot enough. Make sure the heat remains medium so the noodles don’t burn.
