Chocolate Truffle Recipe
Material
- 326 grams dark chocolate chips
- 196 grams of heavy cream
- ¾ tsp ground ginger (optional)
- ½ tsp ground cinnamon (optional)
- 1 pinch ground black pepper (optional)
- 1 small pinch of salt (optional)
- 1 small pinch of chili powder (optional)
- 2 cups dark chocolate chips for coating
- 1 slice of gingersnap cake, grated
- Put the chocolate chips into a heatproof bowl. Add spices such as ginger, cinnamon, black pepper, salt, and chili if desired.
- Heat the heavy cream over medium heat until almost boiling, then pour into the chocolate bowl. Leave for 2 minutes for the chocolate to start to melt.
- Stir gently until the chocolate is completely melted and forms a glossy ganache. Cover the bowl with plastic wrap and let it cool for 15 minutes until the texture hardens.
- Take the ganache using a small spoon or scoop, then shape it into small balls the size of 2 teaspoons. Place the balls on a baking sheet lined with baking paper, then put them in the refrigerator for 15 minutes.
- Melt additional chocolate chips in a bowl set over a pan of hot water. Once the chocolate is melted, add the remaining chocolate chips and stir until dissolved.
- Dip the truffle balls into the melted chocolate using a fork, making sure to coat evenly. Place the balls back in the baking dish, then sprinkle with grated gingersnaps.
- Allow the chocolate coating to set completely before serving. For storage, keep the truffles in the refrigerator to keep them fresh, and let them reach room temperature before enjoying.
