BANDUNG – For seafood lovers, the name kudu kudu fish may still sound strange. However, in one restaurant in the city of Bandung, this fish with a scary face is processed into a unique, appetizing dish.
In terms of appearance, the kudu kudu fish is similar to the puffer fish, which is known to be dangerous because it has deadly poison. This fish has hard skin, almost similar to the texture of pufferfish skin. However, kudu kudu fish is not poisonous and safe to consume.
One of the restaurants on Jalan Dr. Sutami, Bandung City, makes kudu kudu fish one of its mainstay menus. The cooking process is quite complicated, because the tough skin of the fish must be split using a hammer to be able to cut it. After that, the fish flesh is separated from the skin, coated in flour, and fried until cooked.
After frying, the kudu fish pieces are cooked again with salted egg sauce and lime slices to remove the fishy smell, creating a delicious and delicious taste. (Hadith Abdillah)
