It turns out that frying tempeh can destroy its benefits, this is the recommended cooking method


KOMPAS.com – Who doesn’t like eating tempeh? This soy-based food ingredient has become a favorite of many people, both at home and in food stalls.

Not only does it taste delicious when eaten, tempeh is also known to be rich in health benefits.

However, did you know that the way you cook tempeh can affect the nutritional content it contains?

Reasons why don’t fry tempeh

Quoting from Kompas.comProfessor at the Department of Food Science and Technology, Bogor Agricultural Institute, Made Astawan, who also serves as Chair of the Indonesian Tempe Forum, said that tempeh contains various important nutrients.

One of the special ingredients in tempeh is lactic acid bacteria, which functions as a prebiotic to support digestive health.

These lactic acid bacteria are similar to those found in yoghurt, but the levels are even higher in tempeh.

However, the benefits of this bacteria can only be felt if tempeh is cooked using the right method. Unfortunately, cooking methods such as frying can actually damage the content of these good bacteria.

Apart from that, Made Astawan explained that frying tempeh also risks destroying the healthy soybean oil content in it.

Soybean oil which is rich in healthy vegetable fats will be replaced by cooking oil which contains saturated fat. This of course reduces the health benefits of tempeh.

Recommended way to cook tempeh

So that tempeh continues to provide optimal health benefits, Made recommends a cooking method that does not involve too high temperatures. Some recommended methods include:

  1. Steaming
  2. Burn
  3. Baking

However, it is important to ensure that the tempeh used is hygienic and clean during the manufacturing process. That way, the nutritional content of tempeh can be maintained.

Tempeh contains natural MSG

Another interesting fact is that tempeh naturally contains natural MSG (monosodium glutamate), which functions as a flavor enhancer. Therefore, when cooking tempeh, you no longer need to add additional MSG.
