4 Ways to Make Homemade Fried Rice to Taste Umami, Tips from Chefs


KOMPAS.com – Umami or savory is one of the five basic tastes of food, apart from salty, sweet, sour and bitter.

Umami taste can be obtained from fish as a food ingredient, cheese as a processed food, and soy sauce as a seasoning.

In order to get the umami taste, fried rice, which is usually used as breakfast and dinner, must be added with sweet soy sauce.

1. Saute the spices first

Debra shows how to make home-style fried rice. He uses garlic, shallots, salt and seasonings.

Various sliced ​​spices are sauteed first when making fried rice. Apart from ripening the spices, this method can also produce a fragrant stir-fry while cooking.

2. Use leftover white rice from yesterday

Not all rice is suitable for making fried rice. For example, fluffy or mushy rice.

This type of rice makes the grains of fried rice stick together so it doesn’t taste delicious.

Debra recommends pera rice or rice with a texture that is not too soft for cooking fried rice.

“White rice is left over from last night, so it will be softer and won’t be soft when cooked later,” said Debra on the “Good Chat with ABC” program in Jakarta, Wednesday (4/12/2024).

3. Pour sweet soy sauce to the edge of the pan

Debra said that sweet soy sauce should be poured onto the side of the pan while cooking fried rice, not poured directly onto the rice.

“Add the soy sauce from the edge of the pan so it gets hot and the flavors come out smokeyher,” said Debra.

4. Replace sweet soy sauce with salty soy sauce

Finally, if you want to make fried rice without a sweet taste, you can use soy sauce.

“For example, if you like the type of fried rice that doesn’t use soy sauce, then the assumption is that you prefer savory. You can use soy sauce or oyster sauce,” suggests Debra.

Soy sauce is still added at the end of cooking and only needs to be used sparingly, considering that you have already used salt and stock powder.
