5 Ways to Make Fried Foods Healthier, Pay Attention to Oil

KOMPAS.com – Fried food is one of the foods most often found in Indonesia, whether cooked at home or sold on the roadside.

However, we often avoid these foods because they are considered unhealthy. Even so, there are several ways that can help you enjoy fried foods in a healthier way.

Here are some tips you can try.

1. Use oil that is still good

According to experts, make sure the oil used for frying is still in good condition.

After frying food, there are often crumbs left in the oil. If this oil is reused for frying, the crumbs can damage the nutritional value and taste of the food.

Additionally, repeated heating of oil can eliminate its nutritional value and even potentially make it carcinogenic.

If the oil starts to turn dark, smell bad, or foam, it’s time to throw it away. Avoid using oil that is too dirty or rancid.

2. Use healthier flour

Most fried foods are coated with flour or breadcrumbs which gives them a distinctive texture and taste.

For a healthier option, avoid using refined wheat flour. Use gluten-free flour, such as rice flour or corn flour. In addition to offering a similar taste, this flour has better nutritional value.

3. Add baking soda to the mixture

Another clever trick is to add baking soda to the coating mixture. Baking soda will produce gas bubbles in the dough, thereby reducing the absorption of oil by the food. As a result, fried foods become healthier without losing deliciousness.

4. Maintain oil temperature

Frying at too low a temperature can cause food to absorb more oil.

Meanwhile, temperatures that are too high can cause the food to burn. For best results, use a kitchen thermometer to ensure the oil temperature remains stable.

5. Use healthier oils

Avoid using refined cooking oil (refined oil) for frying. Instead, use an oil that is more stable at high temperatures, such as fresh mustard oil, ghee, or olive oil.
