The Best Way to Store Fish to Keep It Fresh

However, most of us don’t live near a port, so getting fresh fish can be a challenge. Fortunately, fresh fish can still be found in markets or supermarkets.

Even so, fish is one of the food ingredients that is most often thrown away due to concerns about its freshness.

Here’s how to store fish properly to keep it fresh and safe.

How to store fish in the refrigerator (not freezer)

The main enemy of fish freshness is warm air. To keep fish fresh, the core temperature of the fish must be below 1 degree Celsius.

Since the average temperature of a refrigerator is usually around 4 degrees Celsius, wrap the fish in plastic to prevent exposure to air, then place it in the coldest part of the refrigerator, usually at the back.

How long can fresh fish be stored?

The storage time for fresh fish depends on the type of fish, how it was stored, and how fresh it was when purchased.

Fresh fish can generally be stored in the refrigerator for up to three days, even longer if the temperature is kept low. However, it is best to consume it as soon as possible for the best taste quality.

To ensure freshness, do a smell and texture test before cooking. Fresh fish has a clean, not overpowering sea aroma.

If the smell is like ammonia or is too strong, the fish has started to rot. In terms of texture, fresh fish feels supple and firm to the touch. If it feels soft or slimy, it should be thrown away immediately.

If you are in doubt, it is better to throw it away than take the risk. Eating rotten fish can cause food poisoning.

Can fresh fish be frozen?

Yes, fresh fish can be frozen, but the method is very important to maintain its quality and texture. These are the steps:

  • Dry the fish with kitchen paper to remove excess moisture.
  • If the fish is a whole side, cut it into smaller portions for easy storage and thawing.
  • Wrap each piece tightly in plastic, then put it in a bag ziplock or use vacuum sealer to reduce exposure to air and prevent damage from freezing.
  • Don’t forget to label the type of fish and the freezing date to make it easier for you to track how long it has been stored.

How long does frozen fish last?

Technically, frozen fish can be kept in freezer indefinitely, but the texture may change after three months.

Therefore, make sure the fish is stored in an airtight condition to maintain its quality.

The best way to defrost fish

The safest way to thaw fish is in the refrigerator (outside freezer). Place the wrapped fish on a plate to catch any liquid that may drip, then store in the refrigerator. This process takes 12 hours to two days, depending on the size of the fish.

Avoid thawing fish at room temperature or in hot water because it can trigger bacterial growth and damage the texture and taste.

If you’re in a hurry, soak the fish in cold water for five to eight minutes, keeping it in its plastic wrap.
