Easy and Savory Balinese Suna Cekuh Fried Rice Recipe


SuaraBali.id – There are various kinds of Balinese specialties that are different from other cuisines in Indonesia. On average, typical Balinese dishes are rich in spices, especially turmeric which makes the dishes yellow.

Not just yellow rice, Balinese fried rice is also yellow and has a strong lemongrass aroma. It’s called Suna Cekuh fried rice.

So what is the recipe and how to make it, here are the steps:

Material:

For Fried Rice:
* 2 plates of cold white rice
* 2 eggs
* 100 gr shrimp, peeled and deveined
* 100 gr squid, cut into rings
* 100 gr chicken, cut into cubes
* 2 red chilies, sliced
* 2 cayenne peppers, sliced
* 1 onion, chopped
* 3 cloves of garlic, chopped
* 2 cm galangal, crushed

*2 cm turmeric

* 2 cm ginger, crushed
* 1 lemongrass stalk, bruised
* 2 lime leaves, cut into pieces
* 2 tablespoons sweet soy sauce
* 1 tablespoon fish sauce
* 1 teaspoon granulated sugar
*Salt and pepper to taste
* Cooking oil

For Cheeky:
* 200 gr kale, cut into pieces
* 100 gr bean sprouts, clean
* 1/2 cucumber, cut into matchsticks

How to make:

Fried rice:
1. Heat cooking oil in a frying pan.
2. Add the eggs and scramble until cooked.
3. Add shrimp, squid and chicken. Saute until it changes color.
4. Add onions, garlic, galangal, ginger, lemongrass and lime leaves. Saute until fragrant.
5. Add white rice and stir until evenly mixed.
6. Add red chili, cayenne pepper, sweet soy sauce, fish sauce, sugar, salt and pepper. Stir again.
7. Cook until the fried rice is cooked and the spices are absorbed.

Cheeky:
1. In a pan, boil kale and bean sprouts until wilted.
2. Remove the kale and bean sprouts, then drain.
3. In a bowl, combine kale, bean sprouts, and cucumber.

Presentation:
1. Place the fried rice on a plate.
2. Put a light topping on top of the fried rice.
3. Serve warm.
