KOMPAS.com – This mango season makes for a delicious dish of young mangoes made into chili sauce.
Young mango chili sauce is made from Manalagi mango, red cayenne pepper, curly red chili, grilled shrimp paste, brown sugar and salt.
Young mango chili sauce is suitable to be eaten with fried chicken or duck and served with grilled fish and white rice.

- 1 Manalagi mango that is still young and sour
- 7 red bird’s eye chilies
- 11 curly red chilies
- 1 tsp grilled shrimp paste
- 1 1/2 tablespoons finely chopped brown sugar
- 1/2 tsp salt

1. First, peel the young manalagi mango, then slice it lengthways the size of a matchstick.
2. Next, grind the cayenne pepper, curly red chili, shrimp paste.
3. Once the spices are smooth, mix them with the young mango, stir until completely mixed while occasionally applying pressure on the mango until the mango releases its juice.
4. After the mango and spices are mixed, if you like spicy food, you can add ground pepper on top. Serve with grilled fish and white rice.
