Recipe for Liver Ampela with Coriander Seasoning, Cook until the spices are absorbed


KOMPAS.com – If you have chicken gizzards at home, you can cook them with coriander seasoning.

Coriander spiced liver gizzards are made with garlic, coriander, cumin, pepper, salt, galangal, tamarind and sweet soy sauce.

The coriander spiced gizzard liver is fried in hot oil, fried until golden brown then served with chili sauce.

Material:

  • 4 pairs of chicken gizzards
  • 1/2 lime, take the juice
  • 1/2 tsp salt
  • Oil for sautéing and frying

Puree:

  • 4 cloves of garlic
  • 2 1/2 tsp coriander, roasted
  • 1/2 tsp cumin
  • 1/2 tsp ground pepper
  • 1 tsp salt
  • 3 cm galangal, bruised
  • 250 ml water
  • 2 tamarind eyes
  • 2 tbsp sweet soy sauce

1. Clean the chicken liver and gizzards, coat with lime juice and salt. Leave it for 15 minutes then rinse.

2. Heat oil, saute ground spices and galangal until fragrant and cooked. Add the gizzard liver, stir until it changes color and becomes stiff.

3. Pour in the water, tamarind and sweet soy sauce. Cook until the spices are absorbed and the chicken gizzards are tender, remove from heat.

4. Fry the liver and gizzards in hot oil until golden brown. Lift.
