For those of you who like simple but flavourful dishes, Ade Koerniawan’s cikur fried rice is the perfect choice. In one of his videos on TikTok, Ade shares how to make fried rice with the unique taste of kencur, or what is known as cikur in Sundanese. This recipe is suitable for fans of spicy and savory dishes.
Ingredients Needed:
The main ingredient:
– White rice
– Anchovies
– Oil for frying
Ground spices:
– 5 cloves of red onion
– 3 garlic segments
– 1 segment of turmeric
– 1 kencur segment
– 2 red bird’s eye chilies
– A little salt
Additional spices:
– 2 eggs
– 1 tbsp oyster sauce
– 2 tsp mushroom stock
– ½ tsp granulated sugar
– ½ tsp ground pepper
– ¼ tsp salt
– Scallions, thinly sliced
How to Make Cikur Fried Rice:
1. Prepare the ground spices: grind the shallots, garlic, turmeric, galangal, red cayenne pepper and a little salt until smooth.
2. Fry Anchovies: Heat oil in a frying pan. Fry the anchovies until crispy, then drain. Use the remaining oil to cook the spices to make them more fragrant and tasty.
3. Saute the ground spices: Saute the crushed ground spices in the oil used to fry the anchovies. Stir until fragrant.
4. Add the Eggs: Add the well-beaten eggs to the pan. Stir with the spices until half cooked.
5. Mix Rice and Seasonings: Add white rice to the pan. Stir until evenly mixed with spices and eggs. Add oyster sauce, mushroom stock, granulated sugar, ground pepper and salt. Stir again until the spices are absorbed.
6. Add Anchovies and Scallions: Add the fried anchovies and sliced spring onions. Stir until completely mixed.
7. Serve: Transfer the cikur fried rice to a serving plate. Add a sprinkling of fried onions and crackers as a complement.
