Typical Malaysian Chicken Curry Laksa Recipe, Eat with Vermicelli and Bean Sprouts

This coconut milk soup dish combines soft vermicelli, fresh bean sprouts and chicken pieces cooked in aromatic curry spices.

Curry laksa ingredients:

  • 600 grams chicken (cut into small pieces)
  • 75 grams long beans (cut into 3 centimeters)
  • 4 pieces of fried tofu (cut each into four pieces)
  • 5 tablespoons cooking oil
  • 5 centimeters cinnamon
  • 1 sprig of curry leaves
  • 2 stalks lemongrass (take the white part and bruise it)
  • 1 liter of water
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 300 milliliters coconut milk
  • 200 grams ready-to-use wet vermicelli
  • 150 g ram bean sprouts (steep in hot water and drain)
  • 4 tablespoons fried onions (for sprinkling)
  • 1 tablespoon lime juice

Ground spices:

  • 8 red onions
  • 5 cloves of garlic
  • 3 red chilies
  • 1 teaspoon shrimp paste
  • 200 milliliters of water
  • 2 tablespoons curry powder

1. Heat cooking oil in a frying pan, then add cinnamon and curry leaves. Cook while stirring the wilted curry leaves, then add the ground spices and saute over low heat until the spices are cooked.

2. Increase the heat then add the chicken and lemongrass, cook while stirring until the spices are evenly distributed and the chicken is stiff, about 15 minutes. Add water, sugar and salt, then continue cooking until the chicken is completely cooked.

3. Add the coconut milk, long beans and tofu, cook over medium heat while continuing to stir so the coconut milk doesn’t break. Correct the taste with additional salt and seasoning just before turning off the heat.

4. Prepare a bowl containing the vermicelli and bean sprouts, then pour the curry sauce and its contents into the bowl. Sprinkle with fried onions and lime juice if you like.
