Manado Yellow Rice Recipe for Breakfast Menu


KOMPAS.com – Manado’s typical yellow rice can be used as a breakfast menu idea with delicious stir-fried skipjack.

Manado yellow rice is made with coconut milk, turmeric, lemongrass, lime leaves, pandan leaves, lime and rice.

Manado yellow rice is served with stir-fried skipjack, beef stew, boiled eggs, dried potatoes, and sprinkled with fried onions.

Material:

  • 500 ml coconut milk (1/4 coconut)
  • 1 tsp salt
  • 5-7 cm turmeric, grated, squeeze out the water
  • 3 lemongrass stalks, bruised
  • 6-8 lime leaves
  • 2 pandan leaves, sliced
  • 400 grams of rice
  • 1 tsp lime juice

Stir-fried skipjack:

  • 350 grams of skipjack tuna meat
  • 1 tsp lime juice
  • 1/2 tsp salt
  • 5 tbsp cooking oil
  • 6 lime leaves
  • 2 stalks lemongrass, bruised
  • 100 ml thick coconut milk
  • 1 tsp liquid tamarind
  • 1 tsp salt
  • 1/2 tbsp granulated sugar

Ground spices:

  • 8 red chilies
  • 10 red onions
  • 5 cloves of garlic
  • 1 tsp grilled shrimp paste
  • 2 cm ginger

Complementary:

  • Meat stew
  • Boiled eggs
  • Dried potatoes
  • Fried onions

1. Put coconut milk in a pan with salt, turmeric water, lemongrass, lime leaves and pandan leaves, cook until boiling.

Add the rice, stir until the liquid dries up and becomes aron, remove from heat. Add the lime into the aron rice, stir well.

Steam the aron rice in a steamer for 30 minutes until cooked, remove from heat.

2. Stir-fried skipjack: Coat skipjack tuna with lime juice and salt, then steam until cooked, remove from heat, let cool.

Shred, remove bones and spines.

3. Heat oil in a frying pan, saute ground spices, add lime leaves and lemongrass, stir until fragrant and cooked.

Add the shredded fish, pour in the coconut milk, stir.

4. Continue cooking until the liquid dries up, add the tamarind water, salt and granulated sugar, stir until the spices are absorbed and oily, remove from heat.

5. Serve yellow rice with stir-fried skipjack tuna and other complementary ingredients.
