This One Ingredient Can Reduce Calories in White Rice


KOMPAS.com – For those of you who like to eat rice but are worried about calorie intake, now there is good news.

Recent research reveals a simple way to reduce calories in rice by up to 50 percent, using an easy-to-find kitchen ingredient, namely coconut oil.

This innovative method was discovered by Sudhair James, a student in Sri Lanka, and his mentor. The process involves simple techniques that can be done at home.

Steps to cook low calorie rice

How to cook low calorie rice is quite easy. Just add 3 percent coconut oil by the weight of the rice you want to cook.

For example, for 1 kg of rice, add 30 grams (around 2 tablespoons) of coconut oil.

Once the rice is cooked, allow it to reach room temperature. Store the rice in the refrigerator for 12 hours for optimal cooling.

Once cooled, rice can be reheated before eating, without reducing its low-calorie benefits.

How does coconut oil work?

The addition of coconut oil to the cooking process works in a unique way. Coconut oil interacts with the starch in rice, changing its chemical structure into a form that is more difficult for the body to digest.

Starch which was initially easily broken down into glucose has now partly turned into resistant starch. This type of starch is not easily digested, so the body absorbs fewer calories. Cooling after cooking also helps speed up the starch conversion.
