Material
- 2 large onions, peeled and quartered.
- 1 piece of ginger (10 cm), peeled and split lengthwise.
- 2 cinnamon sticks (7 cm).
- 2 star anise.
- 3 cloves.
- 2 tsp coriander seeds.
- 6 cups low sodium beef broth.
- 1 tbsp soy sauce or tamari.
- 1 tbsp fish sauce.
- 3 medium carrots, peeled and roughly chopped.
How to Make Pho Broth
- Grill the onions and ginger. Place the onion and ginger over direct heat or roast in the oven until lightly charred. This process will provide a distinctive aroma that enriches the taste of the soup.
- Roast spices. Heat the cinnamon, star anise, cloves and coriander seeds in a frying pan without oil for 1–2 minutes until fragrant.
- Prepare broth. Place the roasted onions, ginger, spices, carrots, soy sauce, fish sauce, and beef stock in a large saucepan. Bring to a boil, then reduce the heat and cook slowly for 30 minutes.
- Strain the stock. Once cooked, strain the stock to separate solid ingredients and spices. You will get a clear sauce with a rich aroma of spices.
- Serve. Use this broth to make Pho by adding rice noodles, thinly sliced beef, and a variety of fresh toppings such as bean sprouts, cilantro, and lime juice.
