KOMPAS.com – Sambal matah is one of the typical Balinese foods. This chili sauce is rich in spices because it uses lemongrass, shallots, garlic and lime leaves.
It’s best to make this chili sauce when you want to eat it so it’s not too oily and is still fresh.

Material:
- 8 red onions (sliced)
- 2 cloves garlic (sliced)
- 10 red bird’s eye chilies (sliced)
- 1/2 tsp grilled shrimp paste
- 2 lime leaves (sliced)
- 2 stalks lemongrass (take the white part, slice)
- 1/4 tsp salt
- 1/4 tsp granulated sugar
- 1/2 tbsp lime juice
- 3 tablespoons cooking oil (heat)
- Mix shallots, garlic, chilies, shrimp paste, lime leaves, lemongrass, lime leaves, salt, sugar and lime juice. Stir while kneading until mixed well.
- Pour in the still hot oil, stir again. Serve with side dishes and rice.
