Ingredients for roasted pomfret with rujak spices:
- 3 fresh pomfret fish (each weighing 150 grams)
- 2 tablespoons tamarind water
- 1/2 teaspoon salt
- 3 tablespoons cooking oil
- 1 stalk lemongrass (crushed)
- 2 lime leaves
- 1 tablespoon brown sugar
Ground spices:
- 5 tablespoons sliced red chilies
- 8 candlenuts
- 1 teaspoon salt
- 1 teaspoon sliced ginger
- 2 tablespoons sliced red onion
- 1 tablespoon sliced garlic
- 1 teaspoon shrimp paste
- 1 teaspoon salt
