KOMPAS.com – A serving of tek tofu typical of Surabaya, East Java, is quite filling. The contents consist of tofu, lontong, bean sprouts, and complements.

Material:
- 300 gr white tofu, wash, cut into cubes
- 100 gr bean sprouts, wash, cover with hot water, drain
- 3 tbsp shallots, fried
- 100 gr shrimp crackers, fried
- 5 lontong ready to use
- Enough oil to fry the tofu
Softened seasoning:
- 1 tbsp red cayenne pepper
- 2 tbsp garlic, fried
- 1 tsp salt
- 100 gr peanuts, fried
- 1 tbsp brown sugar, fried
- 1 tbsp brown sugar, sliced
- 2 tbsp petis
- 100 ml hot water
- 3 tbsp hot soy sauce
Serving accompaniments:
- Young cucumber, sliced
- Chives, sliced
- Fried onions
1. Fry the tofu until half cooked, drain.
2. Mix all the ground spices with hot water. Add petis, sweet soy sauce, and stir until smooth.
3. Serve the tofu with lontong slices. Split the tofu, sprinkle with bean sprouts, shallots and toppings.
