For those of you who are not familiar with this type of food, sate lilit is a variation of satay originating from Bali. This satay is made from finely chopped pork, fish, chicken or beef, then mixed with spices.
Minced meat that has been seasoned is wrapped around a stick of bamboo or sugar cane, then grilled over charcoal. Unlike other satays which are assembled with slender and sharp skewers, wrapped satay skewers have a flat and wide shape.
This surface area allows the minced meat to adhere well. The term ‘lilit’ in Balinese and Indonesian means ‘to wrap’, which reflects the way this satay is made.
Quoted from Wikipedia, although the Sate Lilit dish is recognized as a traditional Balinese culinary delight, the Sate Lilit recipe is actually believed to have originated from Klungkung, an area in the province of Bali. The Sate Lilit recipe then spread to various other corners of Bali and is now recognized as a typical Balinese food.
As an island with a Hindu majority, the choice of pork or fish is more dominant, and beef was initially rarely eaten in Bali. However, to serve consumers who do not consume pork, such as Muslim communities, in restaurants serving Balinese cuisine outside the island, sate lilit often uses chicken or beef as an alternative.
In Bali’s fishing center locations, such as Kusamba village which faces the Nusa Penida Strait, satay lilit made from fish is very popular.
Even though it is not served with peanut sauce like chicken or goat satay, the spiciness of the spices that permeate the mixture definitely makes the taste buds feel as if they are dancing. The spicy taste in satay lilit comes from a combination of various spices stirred into the mixture.
Here is one of the satay lilit recipes that you can practice at home:
Material
500 grams of minced chicken meat
1 stalk of lemongrass, just take the white part and thinly slice
1 lime leaf, finely sliced
30 grams of grated coconut
12 stalks of lemongrass for skewers
2 tablespoons cooking oil or enough for frying
Ground spices
8 red onion cloves
3 cloves of garlic
2 large red chilies, seeds removed
2 segments of ginger
2 galangal chambers
1 kencur segment
1 segment of turmeric, roasted first
½ teaspoon ground pepper
2 candlenuts, roasted first
½ teaspoon ground nutmeg
½ teaspoon coriander
1 teaspoon salt
How to make
– Heat sufficient cooking oil and saute the ground spices until fragrant. Once fragrant, add the lime leaves and sauté for another minute, then drain.
– Mix the sauteed ground spices with ground chicken and grated coconut. Stir until all the spices are mixed evenly with the chicken meat.
– Divide the Sate Lilit mixture into 12 equal portions and roll into balls.
– Poke a circle of Sate Lilit dough into the end of the lemongrass stalk and slowly pull it lengthwise downwards while twisting and pressing the dough.
– Grill Sate Lilit over hot coals until all sides of Sate Lilit are cooked, Sate Lilit is ready to be served!
