JAKARTA, KOMPAS.com – Culinary trends continue to change from year to year, even within months.
On the one hand, culinary trends help prospective food entrepreneurs determine the direction of their business, especially when designing menus.
But on the other hand, culinary trends can be confusing if they don’t align with your interests (passion) while building a business.
So, which one is correct between trend and passion if you want to start a culinary business?

Andry Susanto, chef and owner of Oma Elly restaurant, advises prospective businesspeople to prioritize passion.
“For me, if I’m told to follow trends or… passionyes follow passionif you really believe it,” said Andry at a Unilever Food Solutions press conference at the Fairmont Hotel Jakarta, Monday (4/11/2024).
He shared the unique story of his gelato business. Andry started a gelato business with unique flavors, such as lasagna and tiramisu.

“When Oma Elly started, no one cared about lasagna and tiramisu. Maybe there was, but no one focused on that. Now, many people focus on that,” he added.
That means, indirectly, passion can guide culinary business people to discover the latest food trends.
This can happen if the business actor fully believes in his own interests, not just ego, as stated by Andry.
“As long as we have it passion and know what we want to do, we focus on our own path, what products are interesting and do I want to eat? Don’t see what competitors make. “That is the basic value,” explained Andry.
The basis for starting a food business, said Andry, is to like products that are made by yourself.
