KOMPAS.com – Javanese fried noodles are a typical street food that is easy to find in carts.
You can make your own Javanese fried noodles at home using garlic, onions, sweet soy sauce, tamarind, celery, spring onions and curly red chilies.
Javanese fried noodles are suitable to be served with pickled cucumber, cayenne pepper and crackers as a complement to make it even more delicious.

Material:
- 100 grams of dry noodles
- 100 grams boneless chicken (fillet), cut into 1 cm cubes
- 2 carrots, sliced like matchsticks
- 100 grams cabbage, roughly chopped
- 1 spring onion, sliced 1 cm
- 1 stalk celery, finely sliced
- 1 tbsp fried onions for sprinkling
- 50 ml water
- 3 tablespoons oil for frying
Spice:
- 3 cloves of garlic, finely chopped
- 1/2 onion, halved, thinly sliced
- 6 curly red chilies, sliced obliquely
- 1/2 tsp ground pepper
- 3 tbsp sweet soy sauce
- 1 tsp tamarind water
- 1 tsp salt
- 1/4 tsp flavoring

How to make Javanese fried noodles:
1. Boil the dry noodles until cooked (don’t make them too soft), remove from heat, set aside.
2. Saute the garlic and onions until fragrant, add the chicken, stir until the color changes.
3. Add the spring onions, carrots, cabbage, other spices and water, let it wilt. Add the noodles, stir until evenly mixed, remove from heat.
4. Serve Javanese fried noodles sprinkled with fried onions and celery.
Tip:
Dried noodles should be boiled in water mixed with cooking oil. Add the noodles after the water boils, then cover, and turn off the heat. Leave for two minutes, stir, leave another minute, drain.
