- 500 ml thick coconut milk
- 5 eggs
- 175 gr granulated sugar
- 1 tsp cake emulsifier (SP/TBM)
- 225 gr flour
- Pink dye
- Green dye
- Yellow coloring
- 3 pandan leaves, summed
How to make rainbow coconut milk cake
1. Heat thick coconut milk over low heat while stirring until thick and oily. Lift, measure 225 milliliters. Leave it to cool.
2. Beat eggs with granulated sugar and cake emulsifier until thick and floating. Add the flour while sifting. Stir while slowly pouring in the thick coconut milk until evenly distributed.
3. Divide the dough into three with equal amounts, add different colorings. Grease a 20 centimeter diameter baking tin with a thin layer of margarine. Line the base with baking paper. Pour one spoonful of red vegetable mixture into the center of the pan.
4. Pour another spoonful of green vegetable mixture in the same place. Do the same for the yellow dough. Work until all the dough is used up. Steam in a heated steamer with pandan leaves until the cake is cooked. Lift.
