The main ingredient:
- 1 duck, cut into 8 pieces
- Enough water to boil
- Enough lime juice or vinegar to coat the duck
Spice:
- 1 turmeric leaf
- 2 bay leaves
- 1 stalk lemongrass
- 2 cm galangal
Green Chili Seasoning (ground):
- 250 grams large green chilies
- 10 red onions
- 7 cloves of garlic
- 6 candlenuts
- 1/2 tsp ground pepper
- 2 cm ginger
- 1/2 tbsp coriander
How to make green chili fried duck
- Clean the duck, then coat it with lime juice or vinegar and let it sit for a few minutes. This helps eliminate the fishy smell.
