Sustainable Food Concepts Become a World Culinary Tourism Trend

rMANGUPURA, BALIPOST.com – The concept of sustainable food is becoming a global culinary tourism trend. This cannot be separated from the increasing awareness of environmental sustainability and minimizing carbon footprints. This was conveyed by the Director of Sustainability of the Bali Hotel Association John H. Nielsen, Wednesday (30/10) on the sidelines of the Fourth Annual Sustainable Food Festival in Tanjung Benoa, Badung.

He said the concept of sustainable food is the basis of tourism actors’ efforts to increase awareness about sustainable cuisine. In this activity which lasted for 10 days, 30 October to 10 November, the party provided the opportunity for guests to enjoy the flavors of the archipelago with a sustainable concept through menus served at various BHA member hotels.

Nielsen also stated that through this concept, tourism actors support local farmers and producers. “By prioritizing locally produced food, we not only reduce our carbon footprint but also explore various flavors from various islands in Indonesia,” he said.

Tourism players are said to be committed to efforts to maintain sustainability, one of which is by serving menus that use ingredients that come entirely from Indonesia.

He also highlighted the important role of wise procurement of raw materials in reducing environmental impact. It is said that almost 100 percent of tourism actors use local products, unless the materials are not available in Indonesia, then imports are an option.

BHA Executive Director Diah Ajung added that sustainable food and cooking competitions are the right platforms for various purposes. Apart from promoting local products, this activity can strengthen local relationships, connecting general managers and chefs with local producers, as well as highlighting the talents of local chefs to show off.

Featuring a variety of quality and locally sourced products, the cooking competition also showcases the natural riches that exist in Bali. His party continues to encourage sustainable business practices by prioritizing models that have a significant impact on local producers. (Citta Maya/balipost)
