Delicious Grilled Tuna Jaws with Typical Jimbaran Seasoning, Sold 100 Portions a Day

Grilled tuna jaw with typical Jimbaran spices is a new menu item at Warung Kakiang Denpasar, Bali. Even though it was only launched in June 2024, this menu immediately stole the attention of seafood culinary connoisseurs.

Grilled tuna jaws are selling well with customers at the stall located on Jalan Padma, Gang IX Number 30 Penatih, Denpasar, Bali. On a normal day, the grilled tuna jaw menu sells for around 20-30 portions. Meanwhile, when it’s busy, 100 portions can be sold.

The cook at Warung Kakiang, Kadek Ariana Putra (28), said that the typical Jimbaran grilled spices are indeed an attraction. Many buyers match the taste. It’s not surprising that this menu sells well.

“When it is processed (tuna jaw) it is first soaked using lime and several other spices, one of which is garlic and others (for 20 minutes). The aim is to remove the fishy taste. After that it is fried and grilled,” he said at Warung Kakiang, Saturday (6/ 7/2024).

Ariana again smeared Jimbaran spices when grilling the tuna. The spices include chilies, tomatoes, salt, Balinese sugar and oyster sauce. It doesn’t take too long to prepare a portion of grilled tuna jaw in the Warung Kakiang kitchen. Only about 15 minutes.

In one serving of grilled tuna jaw, buyers also get a plate of plecing kale and bean sprouts. Then, there is soy sauce which contains chopped chilies and sere lemo chili sauce.

There are two tuna jaw menu choices at Warung Kakiang. Namely, size M weighing 250 grams for IDR 40 thousand. Then, size XL or the equivalent of 500 grams which is priced at IDR 70 thousand.

Ariana revealed that the supply of tuna jaws is not too difficult every day. Usually supplied from Benoa Harbor with an average total weight of 50 kilograms.

“On average (buyers of the menu) come from outside Denpasar. Sometimes there are people from Kuta and Kerobokan. For the time being there have been no bad comments. Everyone says it tastes good and the level of doneness is good,” he claimed.

Not only the seasoned grilled tuna jaw menu, there are a number of other menus that previously existed at Warung Kakiang. Among other things, pork ribs with barbecue spices and sere lemo. According to Ariana, this menu can sell around 70 to 150 portions a day.

“We also highlight the view of the rice fields here and sometimes the best thing is when the rice fields are before harvest, especially in the afternoon. That’s the best view. During the day, it’s nice that it’s cool here and there’s a view of the rice fields,” he explained.

One of the visitors at Warung Kakiang, Dewa Putu Notia Saputra (27), said that the grilled tuna jaw at Warung Kakiang suited his tongue, even though it was his first time trying it. He was interested in trying it after seeing promotions via social media TikTok.

“The taste is very delicious, the meat is also fresh and the cooking method is also good. It’s crispy and the inside is also juicy,” said this man from Karangasem.

According to him, the typical Jimbaran spices are the attraction of the menu. There is a combination of spicy and sweet flavors that melt into one. Apart from that, the price is quite affordable. With a price of IDR 40 thousand, this menu can be enjoyed by two people. Plus the atmosphere is fun.

Warung Kakiang has been open since July 29 2020. Every day it is open from 11.00-21.30 WITA. The price range for food there starts from IDR 6 thousand – IDR 95 thousand. Meanwhile, drink prices range from IDR 8 thousand – 40 thousand.
