Chili spiciness scale in Indonesia



Jakarta (ANTARA) – Chili is a popular plant used as a spice mixture in cooking. Chili is unique because of the presence of a compound called capsaicin which gives it a spicy taste.

There are also various types of chilies that have different sizes, colors and levels of spiciness. The level of spiciness of chilies can be measured using the Schoville scale.

The Scoville scale is a calculation that measures the level of spiciness of chilies based on the amount of capsaicin contained in them. The higher the level, the more spicy the chili will be. The unit of measurement uses Scoville Heat Units (SHU).

In Indonesia, there are several chilies that have quite high levels on the spiciness scale. Here are some chilies in Indonesia with their spiciness scale:

1. Cayenne pepper

Cayenne pepper is one of the most widely used stir-fry ingredients in Indonesian cooking. Even though they are small in size, red cayenne peppers have a quite sharp spicy taste or a high level of spiciness. This chili has a spiciness scale of 50,000-100,000 SHU.

2. Big red chilies

This chili is characterized by a bright red color, a rather fat, long shape and a sharp tip. Large red chilies have a taste that is not too spicy. Large red chilies have a hotness scale of 30,000-50,000 SHU.

3. Fat chili

This famous chili from the Dieng area, Central Java is small in size with a slightly fat shape, unlike chilies in general in Indonesia which are long. Gendot chilies have a high capsaicin content, with a spiciness scale that can reach 100,000-350,000 SHU.

4. Hiyung chili

Originating from Hiyung Village, Tapin Tengah District, Tapin Regency, South Kalimantan, hiyung chilies are about 17 times spicier than ordinary cayenne peppers.

This chili, which has a small, bright red cone shape when cooked, has a spiciness level of 94,500 PPM (Parts per Million) or the equivalent of 1,417,500 SHU.

5. Katokkon chili

Katokkon chilies are a type of chili typical of Tana Toraja, South Sulawesi. This chili has a higher level of spiciness than ordinary cayenne pepper and a distinctive aroma. The spiciness scale for Katokkan chilies is 400,000-600,000 SHU.
