KOMPAS.com – You don’t need to come all the way to Aceh to eat Acehnese noodles with medok spices, you can also make your own Acehnese noodles at home.
Acehnese noodle recipe from the book “Acehnese Cuisine” the work of the DeMedia Kitchen Team (2008), published by DeMedia Pustaka, the version is nyemek. For those who like it spicy, you can adjust the amount of chili used to suit your taste.

Ingredients for Aceh Nyemek fried noodles:
- 500 grams of wet noodles
- 3 tablespoons oil for frying
- 7 red onions (finely sliced)
- 150 grams of boiled shrimp
- 150 grams of boiled beef (sliced)
- 100 grams cabbage (finely sliced)
- 100 grams of bean sprouts (remove the tails)
- 1 tomato (diced)
- 2 sprigs spring onions (sliced)
- 1 stalk of celery
- 50 milliliters of water
- 2 tablespoons sweet soy sauce
- 3 tablespoons soy sauce
- 1/2 teaspoon flavoring

Ground spices:
- 7 red chilies
- 1 centimeter ginger
- 3 cloves of garlic
- 3 candlenuts

How to make Aceh Nyemek fried noodles:
1. Boil the wet noodles with hot water until soft, then drain and set aside. After that, heat a little oil in a frying pan, then saute the sliced shallots until fragrant.
2. Add ground spices then saute until the spices are cooked. Then add boiled shrimp, beef, cabbage, bean sprouts, tomatoes, spring onions and celery leaves, then stir-fry until all ingredients are mixed well.
3. Add a little water, sweet soy sauce, salty soy sauce and seasoning, then cook while stirring until it boils. After that, remove from heat and serve while warm.
