Recipe for Moringa Leaf Lodeh, a Traditional Vegetable that is Rich in Nutrients

Moringa leaf lodeh recipe

Material

  • 5 bunches of Moringa leaves, chop
  • 1 white tofu, cut into cubes
  • 100 g potatoes, cut into cubes
  • 1 sweet corn, cut into 2, and fried
  • ½ cooked
  • 1200 ml coconut milk from 1 coconut
  • 2 tsp salt
  • 2 tsp granulated sugar
  • 2 cm galangal, crushed
  • 3 bay leaves
  • 2 green chilies, sliced ​​round
  • 2 large red chilies, sliced ​​obliquely
  • 3 tablespoons vegetable oil, for frying

Ground spices

  • 3 cloves of garlic
  • 4 red onions
  • 1 tsp coriander, roasted
  • 3 candlenuts, roasted
  • 1 cm galangal

How to make Moringa leaf lodeh

  1. Saute ground spices with galangal and bay leaves until fragrant.
  2. Add the coconut milk, then stir well so that the coconut milk doesn’t break.
  3. Add tofu, potatoes, green chilies, red chilies, sugar and salt to the coconut milk. Stir well and cook until the vegetables are perfectly cooked.
  4. Lastly, add the Moringa leaves. Cook briefly until wilted, then remove from heat.
  5. Serve the moringa leaf lodeh with a sprinkling of fried shallots to add flavor and crunchy texture.
